Oh my these will be addicting! Looking for a simple & delicious snack to throw in your lunch or gym bag for a quick energy boost? I could have used one of these after hot pilates this morning!!
Try these little scoops of heaven!! I used almond butter, a little coconut nectar as sweetener & sprinkled a little Himalayan salt & cacao powder on to give an extra sweet & salty flavor. Enjoy!!!
3 tbsp coconut oil, softened
3 tbsp peanut or other nut butter
Drizzle of sweetener (stevia or coco nectar good choices)
Dash of Himalayan salt
Mix all ingredients together until smooth. Use a tablespoon and scoop into a ball onto wax paper, or put into into mini muffin pan (use liners!) & put in freezer for 20 minutes.
Try not to eat all at once!! Keep in freezer or fridge for delish healthy snack.
No, unfortunately not that kind! Worked my glutes off this morning at P20’s buns & biceps class!!! Great new studio in midtown Sac with tons of classes to choose from…walking 13 blocks to get there didn’t hurt either! Thanks TK for the inspiration!

Had a great time at the Sacramento food film festival
with my friend Terri; tonight’s showing was the documentary “the way back to Yarasquin” showing at midtown’s Chocolate fish coffee roasters. It follows Honduran entrepreneur Mayra Orellana-Powell develop a thriving locally led farming group to import high quality specialty coffee to the US.
We got to sample her coffee & was quite delish! Mayra & the film director were on site for a Q&A.
Support local farmers when we can!
Festival runs thru Sunday so check out one of the films if you can.

Happy Monday! Day 2 of my blog and have exciting news to share: I’m an official board member for Habitat for Humanity of Greater Sacramento! I am beyond thrilled to be able to take my passion for this organization to another level, serving as an advocate for the amazing work that Habitat does in our community, to share my experiences with helping build homes and hopes for families, and support the organization in its continued growth and community development.
I’ve been on 3 global village builds, and leading a team on another trip to Nicaragua this November! I’ll share some pics of my adventures but they don’t begin to describe the feeling you get and the emotions you share with the families you are building for, as you are truly changing someone’s life forever.
